Lemon Curry Soup

Tthis bright, lemony soup is light and refreshing, and completely delicious. The lemon and curry flavors work so well together. I’ve been making this soup for years- it’s one of my favorites! It’s easily made Whole30.

Notes

LAZY VERISION

  • You can skip the blending if you want- to make it thicker just let the soup cook for a little longer.

  • Buy pre chopped onion and shredded carrots instead of chopping yourself.

SUBSTITUTIONS

  • Make this recipe Whole30 by eliminating the honey and the chickpeas. You can add more potatoes to add more carbs if you want!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!
