NOTES
You can grill the chicken if you prefer. Add the sauce to it, then grill it, then cube it after.
Wanna bring this to a potluck BBQ? You could omit the chicken to make it more of a side dish!
LAZY VERSION
Use rotisserie chicken instead of making your own.
SUBSTITUTIONS
Sub for red onion: green onion, or omit
Sub for goat cheese: feta, gorgonzola, bleu cheese
Sub for arugula/ bell pepper: any veggies you like! Carrots, tomatoes, broccoli, blanched green beans or asparagus would all work
STORAGE
Allow everything to come to room temp and then store in airtight containers, like these.
You can wait to add the arugula until the day you eat it, if you prefer! I added it on prep day and it stayed fresh for me.
REHEATING
You can eat this hot or cold! If you want to eat it hot, reheat for 1-2 minutes, stirring halfway through.
REDUCE FOOD WASTE
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
Leftover arugula? Use it to make pesto! Try this recipe.
