NOTES
No crockpot? No problem! Marinade the pork in the sauce and grill it. No grill? Sear the pork on a skillet, then bake until it’s cooked through. Cube the pork when it’s finished cooking.
SUBSTITUTIONS
Sub for pork tenderloin: chicken thighs
If you want more veggies, you can add sliced bell peppers to the crockpot with the pork
Sub for cilantro in the crema: you can omit the cilantro and it will still be tasty, or you can add 1/2 of a jalapeno to make it spicy.
LAZY VERSION
You can use store bought lemon, lime and orange juice
STORAGE
Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep my cabbage veggies separate from the pork, beans and rice.
Store the crema separately. I like using these containers.
If topping with avocado, store it separately.
REHEATING
Remove rice, beans and pork from your meal prep container and add to a bowl. Heat for 1-2 minutes, stirring halfway through. Then add the toppings and crema.
