Chicken Corn Chowder

If you’ve been a subscriber for awhile, you know I use my crockpot year round. But it’s always nice when fall rolls around to bust out the crockpot without having to explain yourself. This Chicken Corn Chowder is the perfect recipe for your crockpot’s fall debut. It’s creamy, cozy and delicious, but of course we keep it light and macro friendly so you can enjoy it and feel good, too.

NOTES

  • If the soup is too thick, you can add more chicken broth or water

LAZY VERSION

  • Use pre chopped onions and bell pepper

SUBSTITUTIONS

  • Dairy free: use a dairy free cream cheese and omit the shredded cheese

  • Sub for cauliflower rice: any chopped veggie

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover bacon? Save it! Put it in a ziploc bag sealed tightly and it will last for 5-7 days- just in time for a yummy weekend breakfast.
