Lemon Parmesan Chicken Sheet Pan

This Lemon Parmesan Chicken Sheet Pan tastes light, bright and summery, but has the comfort of a nice warm meal. It’s a delicious changeup from all the cold salads and smoothies that have been making up most of my diet. You’ll love how easy it is to make, too. Sheet pan meals are the bestttt because you just throw everything on and throw it in the oven. Easy peasy.

Notes

LAZY VERISION

  • Buy pre-cut broccoli florets.

  • Buy mini potatoes so you have to chop them less.

SUBSTITUTIONS

  • Dairy free: omit the parmesan or substitute with nutritional yeast

  • Whole30: omit the parmesan or substitute with nutritional yeast

  • Sub for broccoli: cauliflower, zucchini, asparagus

  • Sub for Dijon mustard: any kind of mustard or just omit

  • Sub for potatoes: carrots

STORAGE

  • Allow everything to come to room temp and then store in airtight containers in the fridge. I like using these containers.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

Kids loved it, I made 8 servings for my family of 6 thinking we would have left overs but they ate 90% of it!
