Call me lazy, but I love a recipe that I barely have to do any work for. You may think the crockpot is just for winter and fall, but I love using it year round. These Crockpot Banh Mi Bowls are the perfect summer meal. If you’ve never had a Banh Mi sandwich, it’s a Vietnamese sandwich with spicy pork, sweet and tangy pickled veggies, fresh herbs and mayo. It’s such a delicious combination of flavors and it works perfectly in bowl form!
