This is one of my fave breakfast meal preps ever! It’s so easy and versatile. Add whatever toppings you like- shredded cheese, avocado, salsa, sour cream. I made mine in these individual glass meal prep containers but you can also bake it in a large glass 9x13 pan if you’re feeding a crowd.

Thai Peanut Chicken Salad

I love peanut sauce and I love chicken salad, so this recipe is an obvious winner. It's like your favorite deli chicken salad, but instead of a mayo based sauce, it's a creamy, delicious, sweet and spicy Thai peanut sauce. I love serving this with rice cakes and cucumbers! It's definitely going to be your new favorite summer lunch.

Italian Summer Stew

This recipe is a very special one, because it’s a meal I learned about from my father in law Bob. Bob is quite the character and a fantastic cook. When he first made this Italian Summer Stew (Giambotta) I was confused. In Texas, no one is eating stew in the summer. But as soon as I had a bite, I got it. It’s all the best summer produce in a delicious, light yet hearty stew. It’s comforting and delicious and the perfect break from all the salads of summer. So this is my version of Bob’s Giambotta. This recipe is always in the rotation at our house and my girls love it too. Use up all the summer produce from your garden or farmer’s market and make this delicious, high protein meal.

Crockpot Banh Mi Bowls

I don’t know about you, but I think my crockpot might be my favorite kitchen appliance. I just love to throw ingredients in, wait a few hours, and it’s ready. Call me lazy, but I love a recipe that I barely have to do any work for. You may think the crockpot is just for winter and fall, but I love using it year round. These Crockpot Banh Mi Bowls are the perfect summer meal. If you’ve never had a Banh Mi sandwich, it’s a Vietnamese sandwich with spicy pork, sweet and tangy pickled veggies, fresh herbs and mayo. It’s such a delicious combination of flavors and it works perfectly in bowl form!
